Weekly Menu - Hot enough to fry an egg Edition

It is supposed to be pretty hot again this week so the plan is to not heat up the kitchen. All cooking will be done either in the crockpot or gas grill. My secondhand cast iron and pizza stones will make cooking on the grill so much easier.

Maybe one of these days I will be daring enough to try a solar cooker.

06/08 - Sunday
The boys and I are going out for dinner. The air conditioner isn't working and it is just too hot to cook.

06/09 - Monday
Slow cooker Mexican Chicken - This is the easiest thing ever. 1 lb. of thawed chicken breasts + 1 jar salsa (choose your heat) dumped into the crockpot and cooked all day = yummy goodness. You can use it to stuff taco shells, on top of salads or just as your main meat dish.

06/10 - Tuesday
Meat Lasagna - A George Stella recipe. We have had this before and it is good! I have some made and frozen, so we will just have to toss each piece into the microwave. (Pg 114 LLC)

06/11 - Wednesday
Uncle Al's Sausage and Peppers Casserole - Another Stella Recipe. We haven't tried this one yet, but I looks really good. (Pg 129 SS)

06/12 Thursday
Teriyaki Ginger Garlic Chicken Satay - Yup... Stella Style recipe. I can't help it. The guy knows food. (Pg 76 LLC)


06/13 Friday
Family Style Chicken - Instead of the cut whole chicken George Stella recommends, I might just use leg/thigh quarters. (Pg 152 SS)

06/14 Saturday
Chili Turkey Burgers - Not a huge fan of ground turkey (texture issues) so I will use ground beef. This recipe makes 10 burgers, so we will lave enough leftover for a whole other meal. (Pg 134 LLC)

oh my goodness, my husband LOVES LOVES LOVES Uncle Al's sausage and pepper casserole ( I don't love it as much as he does)

The Mexican chicken sounds good. I have a similar recipe (well similarly easy.)

Take one chuck roast and put it in the slow cooker. Pour a jar of pepperoncini over the top. Cook all day. Serve over noodles or mashed cauliflower. Yummy!
